Earl Grey Tea Cookies

These cookies really do contain tea leaves.  Leaves are ground to a flour-grind consistency for this recipe and then added into the flour. The recipe below lists 1 tablespoon leaf which is ground to yield approximately 1 teaspoon of tea powder. More can be used if preferred, many prefer 2 tablespoons of tea over the 1 indicated here.

Prepare the dough as an icebox cookie dough which can be frozen for literally onths. Simple slice off single cookies for backing fresh whenever you wish or have unexpected company. Earl Grey is used for this recipe but many kinds of tea are delicious including chai, green tea, matcha powder, orange or cranberry spice

This recipe fits into a 4-cup KitchenAid food processor or easily in a Blendtec or Vitamix.

Basic Recipe—

Use organic ingredients for a delicious and even healthful cookie to enjoy!

Yields 2 dozen

1 cup organic all purpose flour or gluten-free all purpose or hi-maize flour
1/4 cup organic cane sugar
1/4 cup organic confectioners’ sugar
1 tablespoon Earl Grey Tea (green or black)
1/4 teaspoon sea salt
1/2 teaspoon organic vanilla extract
1 teaspoon filtered water
1/2 cup unsalted organic butter

Preheat oven to 375°F. Grind tea leaf to a powder using a spice grinder or coffee grinder. Combine all dry ingredients and pulse together in a food processor to mix thoroughly

Add vanilla, water, and butter. Pulse together until a dough is formed. Form dough into a log and place onto a piece of waxed or parchment paper. Roll the log into the paper and roll the log smooth. Chill for 30 minutes in the freezer for immediate use or freeze log for later.

After chilling, slice the log into 1/3 inch thick pieces. Place on baking sheets and bake until the edges are brown, about 11-13 minutes. Let cool on sheets for 5 minutes. Transfer to wire racks.

Serve with tea, coffee, hot golden milk, or hot apple cider
