Potassium Broth Recipes
This broth is particularly helpful for convalescing. The only people who shouldn’t consume this are those who have too much potassium, or on a potassium-restricted or liquid-restricted diet. If you have a medical issue, check with your doctor before beginning any new regiment.
Drinking a potassium broth is safer than taking potassium supplements. Taking a potassium supplement should be short term unless directed otherwise by your doctor through a blood test. Getting too much potassium can be as bad as not getting enough. You will not get too much potassium drinking this broth; it is 100% all foods– foods which are rich in natural, fully bioavailable potassium. While convalescing, prepare and drink this broth throughout the day. It is easy on the stomach and helps speed tissue repair. Potassium Broth is excellent for those with bowel flares such as with Ulcerative Colitis, Crohn’s, or IBS. For bowel flares see Post 97 next.
Two different recipes are provided here. Either are good. You have two options for taste and variety.

Recipe 1
- 4 Russet potatoes- peeled 1/8 inch deep, using both peel and potato
- 4 carrots
- 4 sticks of celery
- 1 bunch of parsley
- 1 bunch of kale
- 1 zucchini squash
- 8 cups of filtered or distilled water
In a large pot, bring water to a boil. While waiting for the water to boil, cut up all the vegetables. Add vegetables to the water and bring back to a boil. Add 1 teaspoon of salt and stir. Turn heat down to simmer and cover. Cook for 1 1/2 hours. Strain juice and put into quart mason jars. Puree the vegetables in a blender and store in a container. The puree is used to make a creamed soup base as a side dish for your meals. After cooling, place the lid onto the mason jar and refrigerate. Consume 1 quart or more daily until well.
Recipe 2
- 6 Russet potatoes- peeled 1/8 inch deep, using both peel and potato
- 2 carrots
- 4 sticks of celery
- 1 bunch of greens (kale, chard, collards, or spinach)
- 2 beets
- 3 (1 inch) knobs of ginger root — do not include ginger root during active bowel bleeding, everyone else is ok
- 8-10 quarts of filtered or distilled water
